Head Chef, Decimo · £65-70k (inclusive of Tronc) · Full Time · 4 Days Week · circa 45 Hours per week [Tuesday - Saturday with fixed days off - Sunday & Monday + 1 other day] · Temporary accommodation available if relocating to London

Michelin-starred Chef Peter Sanchez-Iglesias merges the Spanish cuisine of his family with his love of Mexico for his debut London restaurant, Decimo. Expect lots of flavour - gambas rojas, Iberico pork, mezcal cocktails and a new take on tacos with a dramatically different tortilla. Decimo is situated on the 10th floor of The Standard, London, and features two separate bar areas, expansive main restaurant which showcases live fire cooking and two semi private dining spaces; with floor-to-ceiling windows providing dramatic views across the London skyline.

We are defined by our richness of personality, diversity of background and lifestyle and are now looking for a Head Chef to lead our Decimo Kitchen team and who will capture the very essence of this culinary destination.

Your role

As our Head Chef in Decimo you will oversee a dedicated brigade of 12 chefs and be responsible for all culinary operations for the restaurant in partnership with Chef Peter Sanchez-Iglesias. You will also support ongoing menu development, concepts and dishes for our seasonally updated menus and training of the team. Most importantly you will oversee service delivery and monitor food quality from the pass serving over 200 covers a night at this rooftop destination.

You will of course be passionate about cooking, with an exceptional working knowledge of kitchen operations, and your extensive knowledge of the latest food trends and London restaurant scene will help you create an environment where you will not only delight our guest, but also excite and surprise them to create the ultimate culinary experience in this open kitchen with live fire cooking, that is anything but Standard! Prior experience of preparing Spanish or Mexican cuisine is preferred!

Being part of the senior F&B team; you will work closely with our Executive Chef of the hotel and our Director of F&B. You’ll showcase knowledge, skill and creativity for combining and working with quality Spanish, Mexican and international ingredients in front of your peers and colleagues; demonstrating a flexible and adaptive hands-on approach in order to lead and guide a brigade of talented culinary professionals.

Kitchen management is a key aspect of this role and you will be supported by a dedicated kitchen administrator. From the daily sourcing of ingredients, development and production of dishes, control of products, stock control and management of food cost, food hygiene and HACCP.

This is not a ‘Standard’ Head Chef position so you will need to have miles and miles of personality and stamina, be highly social, upbeat and friendly; confident and can handle pressure well; thrive in a high-volume, high-energy environment and able to work equally well both independently and as part of a team.

in addition to this you will also need….

  • A minimum of 3 years prior experience as a Head Chef or Senior Sous Chef is essential and should have been ideally gained in a similar large scale destination restaurant or wider hospitality business.
  • Experience of working with Spanish &/or Mexican Cuisine 
  • Have excellent people skills and prior experience of managing a large brigade of chefs across a busy, high volume restaurant service
  • Have a solid understanding of menu engineering and the development of high-quality dishes inline with Decimo concepts and briefs [combined with a touch of creative ‘blue sky’ thinking].
  • Have Strong organisational skills and commercial acumen in order to manage inventory and food costs in order to minimise wastage.
  • Hold professional culinary & food safety qualifications to a minimum of level 3 with the ability to develop and deliver effective training to maintain consistent service standards throughout your team.
